The Wine:
Light to medium colour with green edge. Minerally, delicate, classic florals, fine. Tightly structured, brioche, hazelnut, super dry and a classic briny finish. Hand picked, chilled, hand sorted and whole bunch pressed. Juice is allowed to settle for about an hour then racked to barrel to complete fermentation using natural yeast. The wine completes malolactic fermentation to reduce the prominence of primary fruit characters and is then stirred intermittently until Spring. In December the wine is gravity racked, then bottled in early February.
Alc/Vol: 12.7%, pH: 3.16, TA: 6.6 g/L
Cellaring:
The wine will continue to develop complexity and interest with good cellaring for 3-5 years.

About De Bortoli
The third generation of the De Bortoli family, the children of Deen and Emeri De Bortoli, are the custodians of De Bortoli Wines today. Managing Director Darren De Bortoli also oversees the winemaking, alongside Leanne De Bortoli’s winemaker husband Steve Webber. Leanne and Steve manage the Yarra Valley Estate winery and vineyard while Kevin De Bortoli is Company Viticulturist and youngest son Victor De Bortoli is Export Director. Every family member has pride in and a commitment to the business, alongside a passion for great wine and a sense of responsibility about leaving a legacy for future generations.
